Wholegrain Wanton Soup

Breakfast, lunch, or dinner, I'm always happy with a bowl of this wanton soup. Especially on a rainy day, and all I want is to make a simple, hearty, and healthy dish.


Even though the dish sounds intimidating to make, it is surprisingly easy once you try it out. There are many different ways to prepare wanton filling and soup. Chicken, beef, or pork depending on what you are craving on that day. If you want something lighter, you can try making vegetarian wanton.


Today, we use pork and shrimp for our wanton filling and using LG Wholegrain Wanton Skin instead of traditional wanton wrappers.


Healthier and taste as good as the usual wantons



Ingredients


Wanton Filling

  • 1/2 lb (230 g) lean minced pork (ground pork)

  • 1/2 lb (230 g) shrimp (chopped into small pieces)

  • 1 scallion/ green onion (finely chopped)

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1/2 tablespoon corn starch (for sealing)

  • 3 dashes ground white pepper

  • 1 pack of LG Wholegrain White Square Wanton Skin


Chicken soup base

  • 6 cups chicken stock

  • 6 teaspoon light soy sauce

  • 6 teaspoon minced ginger

  • 6 teaspoon sesame oil

  • 3 dashes salt


Instructions


Wantons

  1. In a bowl, mix the lean minced pork, chopped shrimp, soy sauce, sesame oil, and white pepper. Mix well with a fork to form a sticky filling.



2. To wrap the wantons, place a wanton wrapper in one hand, scoop a teaspoon of the wanton filling, place it in the middle of the wrapper, and fold in half along the diagonal to create a triangle. Use your index finger to dab the wrapper's edges with (water + cornstarch) to seal it properly.


3. Bring the two corners together and seal again. Let it sit for half an hour, and you're ready to cook.



4. To boil the wantons, heat a big pot of water until boiling. Add 8 to 10 wantons at a time and boil over medium heat until wantons are floating on the surface of the water. Continue to boil until the wrappers are swollen (cooked) around 1 to 2 minutes. Gently take out the wantons with a spoon and set them aside.


Soup

  1. In a pot, combine the chicken stock, ginger, sesame oil, and light soy sauce together. Let it boil for 10 minutes and turn to the lowest heat to keep warm.

  2. When you are ready to eat, put the wantons in the pot to cook for 30 seconds and serve hot.
